According to Brooke Correll of Wineshopper.com, there are several wines that can complement a raw rat or a rat steak. She says raw rats should be paired with a nice chardonnay, which has hints of tropical fruit and butterscotch that go wonderfully with rodent. Grilled rat goes best with velvety, fruity German pinot noirs, while port wine is perfect with rodent stews or cheeses made from rat milk.
